Pathani Polau

INGREDIENTS:
1. Small Chicken : 2 pcs
2. Ginger : 1” pc
3. Garlic : 4 cloves
4. Potato : 250 gms, boiled
5. Boiled Rice : 250 gms
6. Onion : 250 gms
7. Spinach : 100 gms, grinded
8. Ajwain Leaves : 100 gms
9. Mint and fenugreek Leaves : 100 gms
10. Cinnamon : 2 pcs, 1”
11. Cardamom : 4 pc
12. Cloves : 8 pcs
13. Yogurt : 250 gms
14. Ghee : 250 gms
15. Egg : 2 pc boiled
16. Salt : to taste
17. Green chili : to taste
Spice to Grind
18. Garlic : 1 clove
19. Turmeric : 1 tsp
20. Cumin : 1 tsp
21. Ginger : ½”
22. Coriander : 2 tsp

METHOD:
1. Grind all the ingredients mentioned under spices to grind.
2. Wash the chicken and cut into small pieces. Add ginger, clove and salt to chicken and boil.
3. Fry the boiled potatoes. Keep them aside.
4. Heat ghee in a pan. Add the whole hot spice and sauté for some time.
5. Add chopped onion and fry till it turns golden.
6. Now add spinach paste, ajwain leaves, mint leaves and fenugreek leaves and grinded spice one after one.
7. One the oil separates add yogurt and mix well.
8. Then add chicken pieces and potatoes. Stir for some time.
9. Add rice and some warm water and ghee.
10. Cover the pan with a thin and wet cloth tightly. The cove the lid of the pan.
11. Cook for 30 minutes in simmer.
12. Garnish with eggs and serve.
