Mutton Shahi Polau

INGREDIENTS:
1. Basmati Rice : ½ kg
2. Mutton : 700 gms
3. Milk : ½ cup
4. Yogurt : ½ cup
5. Ghee : 1 cup
6. Onion : 2 tbsp, chopped
7. Cashew nut – Pista – Raisin : 1 cup
8. Ginger – Garlic : ½ tbsp, grated
9. Cumin : 1 tsp
10. Chili Powder : to taste
11. Mutton Juice : 2 cup
12. Cinnamon : 1” stick
13. Cloves : 3 pc
14. Cardamom : 3 pc
15. Mace, Cinnamon , Cloves, Cardamom, Nutmeg, Pepper, Jafran : ½ tsp, powdered
16. Salt : to taste
17. Sugar : to taste

METHOD:
1. Dip the jafran in ½ cup warm milk. Keep aside.
2. Marinate the mutton with yogurt and keep for 30 minutes.
3. Add salt, cinnamon, cloves and cardamom in water and let it boil. One it starts boiling add the rice. Wait till the rice cooked. Once it is done drain the excess water.
4. Heat ½ cup ghee in a pan. Add cashew, pista and raisin. Saute a little.
5. Add rest of the ghee and onion. Fry till it becomes golden.
6. Now add all the ingredients in the ghee and cook properly. Then add the mutton. Mix properly. Let it cook in simmer.
7. One the mutton in cooked properly, add the garam masala, juice and jafran. One it turns thick, add the rice and mix properly.
8. Add the fried onion and cook. Cover and cook for 5 minutes.
