Spring Onion with Shrimps

INGREDIENTS:
1. Small Shrimp : 200-250 g
2. Spring Onion : 300 g
3. Potato : 200 g (about 2 medium)
4. Onions : 200 g (2 medium)
5. Tomato : 200 g ( 1 large)
6. Paanch phoron : 1 tsp
7. Turmeric Powder : 1/2 tsp
8. Salt : To taste
9. Mustard Oil : 1 tbsp
10. White Oil : 2 tbsp

METHOD:
1. Cut potato, tomato, and onions into quarter inch rings.
2. Cut spring onion into 2 inch long pieces.
3. Heat oil in a kadhai.
4. Add paanch phoron and fry for 30 sec till seeds splutter.
5. Add potatoes, and fry for 2 min on medium heat.
6. Add chingri/shrimp and onion and fry for further 2 min.
7. Add tomato, turmeric, sugar and salt. Mix well, cover and fry on medium low heat for about 8 min. Water is not required for this dish.The potatoes should be almost cooked at this stage.
8. Add piyaj koli/spring onions and mix. Fry on medium heat for 5 min till the vegetables are soft.
9. Remove from heat. Serve with white rice
