Sali Boti (Parsian Mutton Dish)

INGREDIENTS:
1. Mutton : 1 kg , cut into very small cubes
2. Tomatoes : 4 Chopped
3. Onions : 4-5 Finely chopped
4. Green chillies : 3-4 Chopped
5. Ginger-garlic paste : 1 tsp
6. Chili powder : 1/2 tsp
7. Turmeric powder : 1/2 tsp
8. Vinegar : 1-1/2 tbsp
9. Jagger : 1-1/2 tbsp
10. Ghee or oil : 2-3 tbsp
11. Water : 2 Cups
12. Coriander leaves : few springs, finely chopped
13. Salt : to taste
For Sali:
14. Potatoes : 6-7 Large
15. Oil : for deep frying

METHOD:
1. Take a pan and heat oil or ghee.
2. Add onions and saute until golden.
3. Add chili powder, turmeric powder, and ginger-garlic paste.
4. Stir for about one minute.
5. Now add the mutton cubes and cook until the meat gets a light brown colour.
6. Add chopped green chillies, tomatoes, water and salt as required, stir it.
7. Bring it to a boil.
8. Cook for 30-40 minutes over low heat.
9. Mix Jagger and vinegar with it.
10. Cook again for about 5-6 minutes.
11. Remove it from the heat.
12. Garnish it with chopped coriander leaves.
13. Boti is ready.
14. For Sali, cut 6-7 large potatoes into very thin straws.
15. Soak them in chilled salty water for few minutes.
16. Drain the water and dry the straws.
17. Deep fry the straws in boiling ghee or oil, until golden brown.
18. Remove excess oil from potato straws and serve with Boti.
