Shahi Polau

INGREDIENTS:
1. Basmati rice : 1 1/2 cups
2. Cashew nuts : 1 tbsp
3. Raisins : 1 tbsp
4. Paneer cubes : 2 tbsp
5. Boiled green peas : 3/4 cup
6. Green chillies : 2 pc finely chopped
7. Caraway seeds (shahjeera): 1 tsp
8. Cinnamon (dalchini): 2 sticks
9. Cloves : 2 pc
10. Cardamoms (elaichi) : 3 pc
11. Chopped mixed fruits (any stewed fruit) : 1 tbsp
12. Saffron (kesar) strands : 1/2 tsp
13. Ghee : 4 tbsp
14. Salt to taste

METHOD:
1. Boil the rice. Each grain of the cooked rice should be separate. Drain and cool.
2. Heat the ghee and fry the cashew nuts. Remove and keep aside.
3. Fry the raisins in the same ghee. Remove and keep aside.
4. Add the shah-jira, cinnamon, cloves, cardamoms and green chillies to the ghee and fry again.
5. Add the rice, paneer, green peas, fruit pieces, paste and salt and mix well.
6. Warm the saffron a little, rub in a little warm water and add to the rice.
7. Decorate with the fried cashewnuts and raisins.
