Anarosher Chutney

INGREDIENTS:
1. Pineapple : 1 heaped cup of long strips, fresh
2. Garlic : 1 clove finely chopped
3. Dates : 8 pcs, cut into thin and long strips
4. Salt : 2 tsp
5. Red chili pepper : 1/2 tsp
6. Big Cardamoms : 1/4 tsp, ground
7. Caramel syrup : 1 tsp
8. Raisins : 3 tsp
9. Vinegar : 3/4 cup
10. Sugar : 1 heaped teacup
11. Water : 1 cup

METHOD:
1. Cook pineapple, garlic and dates with water on a low fire till tender and water is absorbed.
2. Add sugar, Red chili pepper , salt, cardamoms, vinegar and cook on hot fire till it becomes a little thick.
3. Mix raisins and caramel syrup and cook for a few minutes.
4. Pur into a jar.
5. This chutney can be kept for one year.

Note: If fresh pineapple is not available, the same amount of tinned pineapple can be used.
