Alur Dom

INGREDIENTS:
1. Small Potato : 16 whole
2. Green Chillies : 2, slit
3. Coriander Leaves : 1 tbsp, chopped
4. Turmeric Powder : 1/2 tsp
5. Chilli Powder : 1 tsp
6. Ginger : 1", grated
7. Cumin Powder : 1 tsp
8. Yoghurt : 1 tbsp, heaped
9. Cinnamon : 1 inch stick
10. Cardamoms (green) : 2
11. Cloves : 4
12. Sugar : 1 tsp
13. Salt : To taste
14. Mustard Oil - 3 tbsp

METHOD:
1. Boil potatoes for 10 min and peel, drain and keep aside.
2. Whip yogurt along with grated ginger, cumin powder, turmeric, and chilli powder.
3. Heat oil in kadai.
4. Add bay leaves, whole cinnamon, cardamom, and cloves to oil.
5. To it add whipped yoghurt paste and fry on medium heat for 3-4 min or until oil comes to the surface. Stir to ensure that the masala does not stick to the bottom. If required sprinkle water occasionally.
6. Add potatoes, sugar, salt and mix well with masala. Add 1/4 cup water, cover and simmer till potatoes are done.
7. Remove from heat and garnish with chopped cilantro and green chillies.
